I really love to cook with lentils...
A few years ago I had pasta at least twice a week. Today it's lentils. It may be because I do not really eat any meat (only for special occasions) and lentils give me a lot of protein which I would get from meat otherwise.
There are so many different lentils and so many different ways of using them. Here you can see green lentils, red lentils and beluga lentils (the black ones).
Usually when I prepare a lentils stew I begin by frying onion and small pieces of carrots. I then add the lentils with veggie broth and let them simmer for around 15 minutes.
Then I add whatever else I feel like- I like the combination of corn and raisins and some hot indian spices. But sometimes I also add small pieces of potatoe together with the lentils and I flavour it with arab spices. The red lentils I often eat with only onion and carrots and then lots of parsely and arab spices.
There are soooooo many ways of prepapring lentils- this is why I love it so much :)

Actually, Daniel and I will be making some Indian-Style food tonight (that is usually our Monday night protocol) and we love making Bengal lentils and yummy chickpeas with delicious falafel and curried vegetables :) So thank you SO much for sharing this, we have got to try it!
