Vegan, gluten-free cherry-cupcakes with cashew-lime frosting

What a long name for those small cupcakes... ;-)

Anyway, they are vegan, gluten-free and super yummy and easy to make! 
For the cupcakes you just need:

1 1/2 cups  gluten free flour of your choice (I used buckwheat flour)
3/4 cups of sugar (I used brown sugar)
1/3 cups of vegetable oil
Vanilla
Cherries
Baking Soda (a spoonfull)
Vinegar (a sponnfull)
And some water (as much as you need to make the dough smooth)

 Blend all you ingedrients together, fill your dough into you cupcake-pan and bake for 20-25 minutes

Then for your frosting you will need:

Cashewnuts
Soy milk  
Fresh lime juice
Some maple syrup

The quantity depends on how much frosting you like - begin by shredding your cashews and then add the liquids until you have a really nice and smooth cashew-paste. 

Add the frosting when your cupcakes are cold .... and enjoy!


I made those last night because I was crawing for something sweet and I actually enjoyed them this morning for breakfast - what a perfect start in the new week and the new month!

  6. It looks yummy Larissa and i would have not known that the frosting was actually cashew. I like making gluten breads too and our fav is cranberry lemon almond bread, so yummy !
