Buckwheat pancakes with homemade cashew-dates-spread

Hello there! Today I want to share with you my favorite Sunday breakfast :)

Buckhweat pancakes with homemade cashew-dates-spread

For the pancakes you just need buckhweat flour, banana-milk (water and bananas, mixed in the highspeed blender), baking soda. Then just make some like normal pancakes :)

For the spread you need cashwes, dates, and either water, orange juice or lemon juice. I used fresh lemon juice in this one cause I felt like having some lemon-taste :) 
Just blend the ingredients in the food processor or highspeed blender until you have a nice creamy spread. It may take a while but dont give up to early - you will get a super yummy smooth cashew paste in the end!



So why is this my favorite breakfast? Because its super healthy, gives you lots of energy, it has no gluten and no dairy products and its soooo sweet and yummy!
Oh and the cashew spread is of course also veeeery good on bread or even on those raw carrott-cupcakes I made last week. I will share the recipe with you soon :)
